The Malvasía is destemmed and pressed directly, initiating spontaneous fermentation.
A few days later, the same process is carried out with the Forcallat.
Before fermentation completes, both musts are blended (75% Malvasía, 25% Forcallat) and left to mature in stainless steel tanks for one year.
